Ingredients

1 breast
1 kilo of green tomatoes
1 onion
4 cloves of garlic
5 morita chiles
6 eggs
500 grams of panela cheese
A sprig of coriander
All-purpose flour
Oil
Chicken consommé
Broken black pepper
salt

Method of preparation

  1. In a saucepan with water add the clean tomatoes, 1/4 onion, 5 chiles moritas and 2 cloves of garlic. Once the tomatoes are cooked, set them aside.
  2. In another saucepan with water, 1/4 onion, 2 cloves of garlic and salt, cook until the meat is very soft.
  3. Once the meat is cooked and cooled, shred and set aside.
  4. In a mixing bowl put the egg whites of the 6 eggs, reserving the yolks.
  5. Beat the egg whites on high level, once they are well whipped, add the egg yolks and continue beating on medium level so as not to lower the whites.
  6. We add a handful of all-purpose flour to the shredded chicken so that the cakes do not fall apart and the oil does not boil over.
  7. Cut the panela cheese into cubes to taste and mix it with the chicken.
  8. Add the chicken and the cheese with the flour to the beaten egg, mix with slow movements so as not to lower the fluffiness of the egg.
  9. Once the egg and chicken are well integrated, in a frying pan add oil to heat.
  10. Once the oil is hot, make the chicken cakes with the help of a spoon so that they are round.
  11. Remove the cakes from the oil and reserve on absorbent napkins.
  12. In the blender add the tomatoes with the morita chiles, a branch of cilantro, blend well.
  13. In a saucepan add a splash of oil and 1/4 julienned onion, fry the onion, once the onion is soft, add the sauce.
