History of the Wedding Roast

Asado de Boda has its roots in northern Mexico, especially in the states of Zacatecas and Durango, where it is an essential part of wedding celebrations and important events. This dish is traditionally prepared for weddings, hence its name, and symbolizes the union and joy of the occasion.
The recipe for Asado de Boda has been passed down from generation to generation, preserving its authenticity and characteristic flavor. Its origin is believed to date back to colonial times, when Spanish culinary techniques were fused with local Mexican ingredients. The result is a robust and flavorful dish that combines pork with a sauce rich in chiles, spices and other aromatic ingredients.

2 kg pork, cut into cubes.
1/2 tablespoon salt.
3 cloves of garlic.
