Ingredients
4 kg pork loin
Garlic powder
One orange
Ground pepper
Vegetable or olive oil
8 guajillo chiles
18 chiles de árbol
5 garlic
1 tablespoon dried oregano
1 pinch of cumin
5 large peppers
15 small peppers
5 nails
Chicken bouillon powder
A jar of bbq adobo
Method of preparation
- Cut the meat into slices without separating the slices.
- Place the meat in a long aluminum or glass baking dish (refractory).
- Beat 5 garlics together with a tablespoon of garlic powder, a tablespoon of ground pepper, the juice of an orange and 5 tablespoons of vegetable or olive oil. Once it is well beaten, pour it into the meat and massage it perfectly until it is completely integrated.
- Seal the meat on all sides in a large frying pan. Once the meat is browned, remove from the pan and let it rest.
- In a saucepan, put enough oil to brown the chiles de árbol and guajillo and the 5 cloves of garlic. Stir constantly so they do not burn.
- Grind the browned chiles in the blender for the marinade along with a tablespoon of dried oregano, a pinch of cumin, the 5 large peppers, the 15 small peppers, the 5 cloves, 500 g of bbq sauce and the oil in which we browned the chiles.
- With the help of a food brush put the marinade on the pork loin, making sure that each piece is perfectly covered. Cover the container with aluminum foil and put it in the oven at 350 degrees for 2 hours.
- Once the meat is cooked, remove from the oven and marinate again with the help of the food brush. Put back in the oven for 10 minutes. Remove and serve in slices with the garnish of your choice. Ready, bon appetit.
