History of the Wrapped Children

Platillo Niños Envueltos
Children's Wrapped Dish - Chef's Region

The origin of Niños Envueltos dates back to the kitchens of Eastern Europe, where the technique of rolling meat stuffed with vegetables was a traditional dish in countries such as Poland, Russia and Ukraine. With the arrival of European immigrants to Latin America, this dish was adapted and adopted in various regions, including Mexico and Argentina, where it became a popular home-cooked meal. Each culture has put its own twist on the recipe, but the central concept of stuffed meat has remained constant.

In Mexico, Niños Envueltos are a reflection of the rich cultural fusion that characterizes the country's cuisine. The traditional European recipe was modified to incorporate local ingredients and flavors, resulting in a dish that is both familiar and distinctly Mexican. Today, Niños Envueltos are a comfort food served at family gatherings, celebrations and everyday meals, celebrating both European heritage and Mexican culinary creativity.

Ingredients

4 flattened beef steaks
1 carrot, cut into sticks
1 zucchini, cut into sticks
1 bell bell pepper, cut into sticks
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon ground pepper
4 tablespoons Worcestershire sauce
½ tablespoon seasoning juice
Salt, to taste
Oil

For the red sauce:

4 ripe tomatoes
½ piece of white onion
1 clove garlic
1 tablespoon vegetable oil
1 teaspoon of salt or powdered bouillon
4 chipotle chiles in adobo sauce

Method of preparation

  1. In a wide bowl, mix 4 tablespoons Worcestershire sauce, ½ tablespoon seasoning juice, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon ground pepper and a pinch of salt.
  2. Place 4 flattened beef steaks in the marinade and let stand for 15 minutes, covered with plastic wrap. Drain the steaks and place them on a plate.
  3. Cut 1 carrot, 1 zucchini and 1 bell bell pepper into sticks, and use them to stuff the steaks. Place 2 or 3 sticks of each vegetable, depending on the thickness, over the meat, and wrap like a burrito: the ends towards the center and then roll them up. Close with a couple of toothpicks so that the filling does not come out.
  4. In a large skillet, heat a drizzle of oil and sear the meat rolls, that is, fry them until golden brown on all sides. Remove from the pan, place them in a baking dish and cover them with aluminum foil while you prepare the sauce.
  5. In the same pan as the meat, roast 4 ripe tomatoes, ½ piece of white onion and 1 clove of garlic, until they begin to brown and the tomatoes are soft.
  6. Blend the tomatoes, onion and garlic with 4 marinated chipotle chiles until you obtain a smooth sauce without lumps. If you feel it is too thick, add a splash of water.
  7. In a saucepan heat 1 tablespoon of oil and pour the sauce. Bring to a boil and cook over medium-low heat for 10 minutes.
  8. Season the sauce with 1 teaspoon of salt or bouillon powder, and introduce the steak rolls with vegetables. Cook covered for 10 minutes so that the vegetables are soft and the steaks are well cooked.
  9. Serve your meat rolls stuffed with vegetables with rice, mashed potatoes or baked beans, you will have a complete meal for the whole family.
