Hollow out the inside, taking care to leave a wall at least 1 centimeter thick, and let air dry overnight or up to 2 days.<\/li>\n\n\n\n<li>In a large bowl, season 1 kilo of ground pork with \u00bd cup of vinegar, 1 cube of chicken bouillon, 1 \u00bd teaspoon of oregano, 1 teaspoon of ground cinnamon, 4 cloves, 1 teaspoon of cumin, 4 chili peppers and 1 tablespoon of salt. Reserve.<\/li>\n\n\n\n<li>In a large skillet or saucepan, melt 4 tablespoons of lard and saut\u00e9 \u00bd white onion, finely chopped, until translucent. Add 2 tomatoes, finely chopped, and cook for 5 minutes.<\/li>\n\n\n\n<li>When the tomato begins to release liquid, add the seasoned ground beef and 2 bay leaves. Cook over medium heat for 15 minutes and add 2 Yucatecan sweet chiles or bell peppers, finely chopped, \u00bc cup capers, 3 tablespoons raisins, \u00bc cup chopped olives and 1 cup chicken broth.<\/li>\n\n\n\n<li>Cook for 10 more minutes, turn off the heat and add 4 boiled eggs, finely chopped. Mix so that everything is integrated. Set aside.<\/li>\n\n\n\n<li>For the red sauce: blend 4 tomatoes with \u00bd piece of white onion, 1 Yucatecan sweet chile or bell bell pepper, 2 cloves of garlic and \u00bd cup of chicken broth.<\/li>\n\n\n\n<li>In a saucepan, melt 2 tablespoons of lard and fry the sauce. Let cook for 5 minutes and set aside.<\/li>\n\n\n\n<li>For the kool: heat 500 milliliters of chicken broth and, when it boils, add 4 tablespoons of lard and \u00bc cup of flour, stirring to break up any lumps. Add 2 tablespoons of capers and 4 tablespoons of olives, finely chopped, and cook for 10 minutes over low heat to thicken and cook the flour.<\/li>\n\n\n\n<li>Fill the cheese ball with the meat, place the lid and wrap it with a sky blanket, tying it with a string or the same blanket. To protect it better, you can also cover it with a banana leaf greased with butter. Reserve the leftover filling for serving time.<\/li>\n\n\n\n<li>In a large pot, pour enough water to cook the cheese, without covering it completely so that it does not enter the picadillo. Heat the water over very low heat and, when it starts to boil, put the cheese in it for 3 minutes, holding it.<\/li>\n\n\n\n<li>When the cheese feels soft, remove it from the pan and let it rest for 3 minutes before serving. Another option is to microwave the cheese for a couple of minutes, just to soften it.<\/li>\n\n\n\n<li>Slice the Yucatecan stuffed cheese as you would a pie.
